Why did you choose to become a DaVinci Gourmet Flavour Genius? ​

I want to discover and understand more about beverages and applications. To learn what other things to consider aside from just combining different ingredients with different methods.

In your opinion, what are the biggest flavour trends of 2019 in the Philippines?

I can say, that the biggest flavour trend of 2019 in the Philippines is Cheesecake, specially used for milk tea. But some use it for different application like fruit teas. Given its creamy and tangy notes, it’s quite versatile in terms of application.
 
For the next trend, I recently noticed that dairy base drinks have been popular lately, it’s a combination of signature milk and flavour.

Which is your favourite DaVinci Gourmet product and why?

DaVinci Gourmet Frappease Powder. I was actually amazed on how it made a difference on the drink. It gives a creamy flavour without using milk as well as binds the ingredients together for a well-rounded flavour. Some would think limitations with its application and usage, but it will always depend on the hands of a craftsman.

What are some key challenges Baristas or Mixologists are facing in the industry?

Craft Mixology as well as Third Wave became more popular in the beverage industry. And it’s fascinating to study both. But a lot in the industry have been trying to execute recipes that are too complicated to be appreciated by the consumers.

How would you see them overcoming these challenges?

Keep it short and simple but with a twist. “Simplicity is the ultimate sophistication” -Leonardo Da Vinci

What advice would you give to young aspiring baristas or mixologists who are eager to learn and succeed in the trade?

Always listen and be open, it’s either to learn something new or refresh your knowledge. Never be afraid to apply your knowledge. “Knowledge without application is like a book that is never read” -Julian Hall

What is your favourite beverage to make and why?

I always enjoy making myself a glass of mocha. A good variety of coffee beans and dark chocolate often brings out a note of raw cocoa. It takes me back of how my grandmother used to make us hot chocolate from fresh cacao and it reminds me the comfort of home.

What do you enjoy the most about being a Flavour Genius?

I enjoy every part of being a Flavour Genius. From my discoveries during R&Ds, meeting new people within and beyond the industry, and every time a person enjoys and appreciate my drink masterpieces


JANOVIC’S SIGNATURE RECIPES

BLACK PASSION

This drink blends together a good balance of tropical flavours in a smoky spirit. Simple drink with a twist.

DAVINCI GOURMET INGREDIENTS 

Tropical Passionfruit Syrup 20ml

OTHER INGREDIENTS 

Whisky 30ml

Fresh Lemon Juice 10ml

METHOD

Pour in all ingredients into cocktail shaker with ice

Shake vigorously for 5 – 7 seconds

Pour mixture into 6oz glass with ice

Garnish with lemon peel

Tasting Notes: Tart tropical flavours of the passionfruit with smoky spiced notes of whiskey balanced with the acidity of lemon.

BUTTERFLY MIRAGE

The butterfly pea flower tea infused with cucumber, basil and lemon for more and wider health benefits.
 
DAVINCI GOURMET INGREDIENTS 

Peach Garden Syrup 20ml

OTHER INGREDIENTS 

Butterfly Pea Flower Tea 2g

Water 1L

Cucumber 2 strips

Lemon 3 slices

Basil Leaf 2pcs

Ice 200g

METHOD

Butterfly Pea Flower Tea Infusion:

Brew Butterfly Pea Flower Tea (2g to 1L hot water)

Place 200ml of butterfly pea flower tea into the lower part of the siphon

Place cucumber, lemon and basil leaves into the hopper part of the siphon

Heat for 1-2 minutes

Stir gradually and let it infuse for 3-4 minutes

Assembly of Drink:

Add syrup to the glass then add ice

Top the glass with 100ml of the infused butterfly pea flower tea

Garnish with lemon slice and basil leaf

Tasting Notes: A fresh combination of herbal, floral and astringent taste with citrus notes and the sweetness of peach.

 

CRIMSON NITRO

A refreshing and calming drink to enjoy.

DAVINCI GOURMET INGREDIENTS 

Peach Garden Syrup 15ml

Fragrant Lychee Syrup 10ml

OTHER INGREDIENTS 

Chamomile Tea 150ml

Lemongrass 1stalk

Grapefruit 2slices

METHOD

Muddle Lemongrass

Place all ingredients into Whipper Cannister

Load in N20 Charger

Let it infuse for 1 minute

Dispense into glass

Tasting Notes: The aromatic essence of Chamomile flavoured with the sweet and fruity taste of Peach and Lychee infused with Lemongrass and Grapefruit for an herbal, citrusy and bitter end notes.
